Broad Bean Dip

  1. Remove the broad beans from their pods.

  2. Boil the beans with several garlic cloves until they are soft and easy to mash.

  3. Mash the beans and garlic, you can use a food processor or mash by hand. Add lemon juice, olive oil, a generous spoonful of your favourite soft goat cheese (we use Merediths) or feta, and salt to taste. You can also add fresh herbs such as thyme or mint to your dip. The balance of flavours is up to you!

Serve with chicken, beef, lamb, fish or with crusty bread. The dip freezes well, so you can enjoy it anytime!
